Yield 4 people

1 1/2 lb. pork loin, diced

1 TBSP ground fresh ginger

1 bunch scallions

2 oz. sesame oil

1 oz. rice wine vinegar

1/2 lb. snow peas

Salt and pepper to taste

Heat wok or sauté until very hot. Add sesame oil. Season pork with salt and pepper; add to wok and sauté for 3 minutes. Add ginger and scallions and sauté for 30 seconds. Add snow peas and sauté for 30 seconds. Add rice wine vinegar. Re-season with salt and pepper if necessary.
