Serves 4 people
2 lb. beef skirt steak or chicken breast
1/2 medium red onion
2 red bell peppers
1/2 head fresh cilantro
Zest of 2 limes
2 cloves minced garlic
1 tsp. Fresh chopped oregano
1 small piece yellow squash
1 tbsp extra virgin olive oil
Salt and pepper to taste
Soak four-12 inch wooden skewers in water for 1 hour.
Cut beef or chicken into two by two inch squares and reserve. Cut red onion, jalapeños, red bell peppers and squash into two by two inch pieces.
Assemble skewers alternating pieces of meat and each of vegetables. Marinate skewers with lime zest, cilantro, garlic and oregano for 30 minutes. Season to taste with salt and pepper.
Cook over high heat on grill until meat is 130 degrees or until
Chicken is firm. Served with favorite Cinco side!
