Healthy Granola

YIELDS: 2 1/2 LBS.


4 cups Quaker quick oats

1 cup sliced almonds

1 cup dried cherries

1/2 cup golden raisins

1/2 cup corn oil

3/4 cup maple syrup

1/4 cup honey

2 TBSP ground cinnamon

1 TBSP vanilla extract


Combine oats and almonds in large bowl and reserve. Combine corn oil, maple syrup, and honey in separate bowl. Add cinnamon, and vanilla extract. Add oats and almond mixture and mix well. Evenly spread on non-stick baking sheet trays. Bake at 300° for 25-30 minutes or until golden brown. Allow to cool. Add raisins and dried cherries.

Note: For this recipe you can also add 2 cups chocolate chips, 4 oz. baked low salt pretzels and 1 cup chopped prunes.
