Roasted Chicken and Garlic

Serves 4

4 chicken drumsticks

4 chicken thighs

1 head garlic

1 TBSP chopped oregano

1 TBSP chopped Italian parsley

Salt and pepper to taste

Zest of 1 lemon

1 tsp. red chili flake (optional)

1 TBSP extra virgin olive oil

8 medium sized red “b” potatoes

Wash and cut potatoes into medium dice and reserve in cold water. Break open head of garlic and peel cloves and reserve.

Place chicken in large kitchen bowl. Add garlic cloves, chopped herbs, lemon zest, chili flake and olive oil. Toss to coat evenly. Add potatoes to bowl and toss. Season with salt and pepper to taste.

Lay in a large roasting pan and roast in a preheated 375° oven until chicken is crispy, approximately 30 -45 minutes. Remove from oven and arrange on serving platter.

Serve with either steamed green vegetables or tossed salad.
